Best Cinnamon Rolls in Gràcia, Barcelona
Gràcia's favorite cinnamon rolls, near you
Our cinnamon rolls, baked fresh daily here in Gràcia, Barcelona, aren't made in a hurry, and they're not just any cinnamon bun. They're inspired by Swedish-style buns, with a much softer dough than a typical American cinnamon roll, and a far more generous amount of cinnamon in every layer. Those two things are what set them apart.
A Tangzhong Dough, Enriched Like Brioche
The dough begins with a tangzhong, the technique behind Japanese milk bread, in which a portion of the flour and milk is gently cooked before being incorporated into the dough. It takes more time, but it completely transforms the texture. By allowing the dough to retain far more moisture than a traditional brioche, we create cinnamon rolls and cardamom buns that are incredibly fluffy, light, and tender, with delicate pull-apart layers that stay fresh for longer.
From there, we enrich the dough like a classic brioche with butter, eggs, and milk, creating a balance between Japanese milk bread and French brioche. Light, yet with all the richness of a brioche. Soft, without feeling heavy.
Generous Cinnamon in Every Layer
Then comes the cinnamon, the part that really makes the difference. We don't believe in timid fillings. Every roll is generously layered with cinnamon so its flavor shines through in every bite, balanced with butter and just the right amount of sweetness. It's that bold, lingering flavor, layer after layer, that people remember after trying it.
Inspired by Swedish Fika
Our recipe was inspired by the time we spent in Sweden, where cinnamon buns are part of everyday life, and fika, the Swedish tradition of taking a break to enjoy coffee and something sweet, is almost a national institution. We weren't trying to recreate a particular Swedish recipe; we wanted to capture what made those buns unforgettable: incredibly soft dough, plenty of cinnamon, and a pastry that's meant to be enjoyed slowly with a great cup of coffee.
Our Bestselling Pastry
Our cinnamon roll is where the story of Oso Grizzly Bakery & Coffee Gràcia began, and today it remains, by far, our bestselling pastry. Every morning, breakfast trays empty quickly as regulars and first-time visitors alike come back for the same thing: an exceptionally soft cinnamon roll, generously filled with cinnamon, made with care and baked fresh every day.
The best way to enjoy one is fresh from the oven, paired with a specialty coffee, just like an authentic Swedish fika. Each cinnamon roll is 3,60€.
"The best 'kanelsnurrer' (cinnamon rolls) I ever had — and I have a house in Sweden so I have tasted hundreds. Fantastic!!" — Ida B.
